Blender Mayonnaise 1
- 2 eggs (at room temperature)
- 2 tbso fresh lemon juice
- 1/2 tsp salt
- 1/4 cup olive oil
- Combine eggs, lemon juice, and salt in a blender and blend at high speed for 1 minute. Slowly add the oil until the ingredients are mixed and have thickened. Refrigerate in a glass jar. Use as you would any other mayonnaise.
