- 1/2 medium yellow onion
- 2 cloves garlic crushed
- 2 tsp dried basil or 1/2 cup fresh basil
- 1 - 1/2 cup fresh tomato diced
- 2-3 cups fresh spinach (optional)
- Sauté onion, garlic, basil (and spinach if used) in 1 Tbsp. olive oil for 5 minutes over medium heat. Add tomatoes and simmer for 10- 15 minutes. Add salt and pepper to taste. (You could also serve this over chicken, or chill it and add it to salads.)
