SPINACH WITH CRISPY SHALLOTS
Ingredients
  • 2 Tbsp. olive oil
  • 4 large shallotssliced thin
  • Saltpepper
  • 1 10- oz. package fresh spinach
  • 2 Tbsp. lemon juice
Instructions
  1. Heat 2 Tbsp. oil in skillet until hot.
  2. Add shallots and cook on medium high heat until crisp, stirring often, about 8 minutes.
  3. Remove from pan.
  4. Sauté spinach in skillet until wilted. You may need to add more oil.
  5. Add 2 Tbsp. lemon juice, stir.
  6. Drain spinach.
  7. Salt and pepper to taste.
  8. Serve with crispy shallots on top.
