Preheat the oven to 450 degrees. Quarter the potatoes into long wedges and put directly into a cold pot of water. Put the potatoes on the stove and heat until the water starts to boil. In a frying pan put enough olive oil to coat all of the potatoes and transfer them to the pan. Sauté for about 10-15 minutes, or until brown, adding the basil, thyme, salt and pepper to taste. Then put potatoes in a baking dish or roasting pan and put in the oven for another 10-15 minutes until the sides are crisp. Serve immediately.
