Ingredients
  • 2tsp olive oilextra virgin
  • 1 large shallotminced
  • 1cup uncooked brown rice
  • 1cup chicken broth
  • 1cup water
  • 3tbsp fresh cilantrominced (or parsley)
  • Saltto taste
  • pepperto taste
Instructions
  1. Heat oil in small skillet, add shallots and cook until soft. Stir in rice, broth and simmer covered until done (or add all ingredients to rice cooker). Let stand 10 minutes and add cilantro/parsley.
