Pineapple, Red Pepper Brown Rice Salad

Ingredients
  

  • 4 cups cooked brown rice
  • 1 tbsp olive oil
  • 1 tsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp lemon juice
  • 1/2 tsp Salt
  • 1/2 tsp hot chili oil
  • 1 cup fresh pinnaple diced
  • 1/2 cup red pepper diced
  • 1/2 cup green onions
  • 1 tsp sesame oil

Instructions
 

  • Take 4 cups of cooked brown rice, stir in pineapple, transfer to bowl. Add lemon juice, chili oil, bell pepper, green onions and sesame oil. Toss to mix. Adjust seasonings with salt and chili oil. Best if served same day
