HERB-GARLIC MARINADE FOR CHICKEN, LAMB, OR SHRIMP
- 6 cloves large garlic
- 1/4 leaves c. fresh rosemary
- 1 c. fresh lemon juice
- 1-1/2 c. olive oil
- 1/3 c. packed fresh thyme sprigs
- 1-1/2 Tbsp. kosher salt
- ground pepper to taste
- Mince together garlic, thyme, and rosemary with salt and mash into a paste.
- Add remaining ingredients and whisk until blended.
- Marinate up to 1 day, covered.
Makes about 2-1/2 cups.
